Sucralose (E955) is derived from sugar through a highly patented manufacturing process. It substitutes three atoms of chlorine for three hydroxyl groups on the sugar molecule. The scientific formula is C12H19Cl3O8. Sucralose is a popular sweetener that is approximately 600 times sweeter than Sucrose (sugar) and three times as sweet as Aspartame. (Erythritol contains around 70% of the power of Sucrose). Therefore very small amounts are required as a food additive to gain a sweet taste. It is the only high intensity sweetener that is produced from sugar and tastes exactly like sugar. It has no bitter aftertaste, unlike its counterpart Sacharose.
Sucralose can be very well used for baking application. Sucralose has an exceptional stability while being heated. This makes it ideal for canning, baking, pasteurization and aseptic processing. However it cannot be used in some baking recipes such as crème brûllée due to the fact Sucralose cannot fully melt and crystallizes when it is in its dry state. Sucralose only melts at 119 degrees Celsius.
